Ingredients
- 1 Kohlrabi Peeled
- 1 carrot Scrubbed
- 1/2 red onion Thinly sliced
- 3-4 Handfuls kale
- 2 Tbsp Organic/homemade mayonnaise
- 1/2 lemon Juice only
- 1 Tbsp avocado oil (Or an alternative oil)
- Pinch salt and pepper
- 1 Handful walnuts Crushed (preferably activated)

Instructions
- If you have a mandolin or blender with a juilienne attachment, slice the kohlrabi and carrot through them. If not, thinly slice and then julienne them by hand.
- Mix together the slaw ingredients and then the dressing ingredients in a separate bowl.
- Mix the dressing into the slaw when you’re ready to eat and sprinkle the crushed walnuts on top. Keep any leftovers in the fridge.
