Ingredients
1
broccoli
1
cup
nuts (such as cashew
almond or walnuts), roughly chopped
1
cup
dried fruit (such as cranberries
goji berries or raisins), soaked if very dry e.g. goji berries
1/2
in
red onion
sliced (can be soakedsome apple vinegar to soften)
4
tbsp
organic mayonnaise
or make your own
juice of half a lemon
1
garlic glove
crushed
1
tbsp
poppy or chia seeds
Instructions
Roughly grate or finely chop the broccoli.
Mix this with the nuts, fruit and onion.
In a separate bowl, mix together the mayonnaise, lemon juice, garlic and poppy seeds.
Mix the dressing with the broccoli and serve.
