This is a really simple, tasty turkey recipe for those days when you need to quickly throw something together. Goes down great with all the whole family.

Ingredients
- 4 turkey escallops/steaks
- 2 Peppers any colour, sliced
- 1 red onion chopped
- 2 cloves or garlic crushed
- 300 ml passata or tinned tomatoes
- 150 mls white wine
- 1 tbsp fresh or dried marjoram
- 1 tin cannellini beans
- 3 tbsp gluten free breadcrumbs optional

Instructions
- Brown the turkey steaks in a large frying pan and set aside.
- Soften the onion and peppers in the pan with a little oil, butter or ghee then add the garlic for a couple of minutes.
- Add the tomatoes or passata, white wine and marjoram to the pan with the turkey breasts.
- Bring to the boil, cover and simmer stirring occasionally for about 30 minutes, until the turkey is cooked and tender.
- Stir in the cannellini beans and simmer for a further 5 minutes.
- If using, sprinkle on the breadcrumbs and place under a grill for a couple of minutes until golden.
