Ingredients

large onion

sticks of celery

sweet potato

halibut
cut into chunks

fresh or frozen peas

tin of coconut milk

fresh parsley

Instructions
Fry the bacon in a frying pan until crispy and set aside.
In a large saucepan, heat the ghee then add the onion and cook for about 5 minutes, until soft.
Add the stock or water, celery, and sweet potato. Bring to the boil and reduce to a simmer for about 15 minutes.
Add the halibut, peas and reserved bacon and cook for a further 5 minutes.
Add the coconut milk and parsley, warm through and then serve.
