Oh wow, halibut chowder….. Who’d have thought a previous fish-hater would be cooking such a meal. This is DE-LI-CIOUS!!!!! AND simple to boot!!!

Ingredients
- 1 tbsp ghee
- 9 rashers streaky bacon chopped
- 1 large onion chopped
- 600 mls stock or water
- 2 sticks of celery chopped
- 1 sweet potato chopped
- 500 g halibut cut into chunks
- 1 cup fresh or frozen peas
- 2/3 tin of coconut milk
- 1-2 tbsp fresh parsley chopped

Instructions
- Fry the bacon in a frying pan until crispy and set aside.
- In a large saucepan, heat the ghee then add the onion and cook for about 5 minutes, until soft.
- Add the stock or water, celery, and sweet potato. Bring to the boil and reduce to a simmer for about 15 minutes.
- Add the halibut, peas and reserved bacon and cook for a further 5 minutes.
- Add the coconut milk and parsley, warm through and then serve.
