  1. Lay your sliced aubergines onto some kitchen paper and sprinkle over the salt. Leave for 10 minutes then turn and do the same on the other side, then rinse and pat dry.
  2. Heat a large frying or griddle pan and fry the aubergines in the cooking oil until they are soft and slightly browned (turning half way through).
  3. Mix the olive oil with the garlic and drizzle this over the cooked aubergine in a serving dish.
