In the past I’ve often over-looked the aubergine, not really knowing what to do with it and depending on how it is cooked, the kids can tend to turn their noses up at it. This recipe, however, is so delicious and easy that you could add it as a side to so many meals. It’s so juicy and tender that the kids chomped away happily too.

Ingredients
- aubergines topped and tailed and thinly sliced along the length
- sea salt
- 2-3 tsp cooking oil e.g. coconut sunflower, rapeseed
- 1 tbsp olive oil
- 1-2 Garlic cloves crushed

Instructions
- Lay your sliced aubergines onto some kitchen paper and sprinkle over the salt. Leave for 10 minutes then turn and do the same on the other side, then rinse and pat dry.
- Heat a large frying or griddle pan and fry the aubergines in the cooking oil until they are soft and slightly browned (turning half way through).
- Mix the olive oil with the garlic and drizzle this over the cooked aubergine in a serving dish.
