Ingredients
250
g
quinoa
500
ml
boiling water or stock
1
tsp
ground cumin

spinach leaves
1/2
red onion
finely sliced
3
spring onions
finely sliced
1
fresh green chilli
deseeded and finely chopped

pumpkin seeds
pinch
sea salt
For the dressing:

mint

basil

tbsp tahini
juice of 1 lime

ml
olive oil
salt and pepper
Instructions
Put the quinoa in a saucepan with the water or stock and salt and bring to the boil, then simmer for 12-15 minutes until the liquid has been absorbed
Dry roast the cumin in a frying pan for 1 minute
Add the toasted cumin and spinach leaves to the quinoa and stir until the spinach starts to wilt
Add the red onion, spring onions, green chilli and pumpkin seeds to the quinoa and pour it all into a serving dish
Blend the dressing ingredients and slather over the quinoa
