I love the different flavours in this dish. If you’re new to quinoa this is definitely one to try, I think you might like it!

Ingredients
- 250 g quinoa
- 500 ml boiling water or stock
- 1 tsp ground cumin
- 100 g spinach leaves
- 1/2 red onion finely sliced
- 3 spring onions finely sliced
- 1 fresh green chilli deseeded and finely chopped
- 50 g pumpkin seeds
- pinch sea salt
- For the dressing:
- 25 g mint
- 100 g basil
- 3 tbsp tahini
- juice of 1 lime
- 80 ml olive oil
- salt and pepper

Instructions
- Put the quinoa in a saucepan with the water or stock and salt and bring to the boil, then simmer for 12-15 minutes until the liquid has been absorbed
- Dry roast the cumin in a frying pan for 1 minute
- Add the toasted cumin and spinach leaves to the quinoa and stir until the spinach starts to wilt
- Add the red onion, spring onions, green chilli and pumpkin seeds to the quinoa and pour it all into a serving dish
- Blend the dressing ingredients and slather over the quinoa
