We absolutely loved this easy bean recipe – so much so that hubby actually forgot he doesn’t like butter beans!! I dished ours up as a side to some lovely spiced fried fish.

Ingredients
- 2 tbsp oil (coconut sunflower or rapeseed)
- 2 red onions chopped
- 4 cloves garlic chopped
- 2 tsp fennel seeds
- 2 tsp dried oregano
- 2 x 400g tins chopped tomatoes
- 2 tsp heapedtomato puree
- 2 x 400g tins butter beans
- 200 g feta cheese crumbled
- Sea salt and freshly ground black pepper

Instructions
- Heat the oil in a large pan and gently fry the onion for a few minutes, before adding the garlic, fennel seeds and oregano and cook until the mixture looks soft.
- Add the tinned tomatoes and tomato puree and leave to simmer for 20 minutes.
- Add the drained beans and simmer for another 10 minutes.
- Season, then add the feta and stir well before serving.
