roughly chopped

fresh spinach
Instructions
Simply saute the carrot, onion and chilli in a large pan in some oil of your choice (I like coconut for this recipe).
After about 5-8 minutes, when the vegetables have started to soften, add the mince and brown through.
Finally add the tomatoes, cumin and coriander and cook for another 5-10 minutes before stirring through the spinach just before the end of cooking.
