Whilst not necessarily a show stopper, this is such a simple ‘throw it together in a few simple steps’ dinner, that I couldn’t not share it with you. This is a true meal in under 30 minutes and it’s likely you have the ingredients knocking around in your kitchen.
I dished mine up with some cauliflower, simply roasted in the oven with some rapeseed oil, lemon juice and a touch of sea salt.

Ingredients
- 2 carrots sliced
- 1 red onion sliced
- 1/2 red chilli sliced
- 1 clove garlic sliced
- 500 g beef mince
- 2 handfuls Cherry tomatoes halved
- 2 tsp cumin
- large handful fresh coriander roughly chopped
- 3 large handfuls fresh spinach

Instructions
- Simply saute the carrot, onion and chilli in a large pan in some oil of your choice (I like coconut for this recipe).
- After about 5-8 minutes, when the vegetables have started to soften, add the mince and brown through.
- Finally add the tomatoes, cumin and coriander and cook for another 5-10 minutes before stirring through the spinach just before the end of cooking.
