I just made a huge batch of these to portion up for the freezer. They will keep us going in lunches for a few weeks. They go great with my salad and the kids love them too – they’re such little carnivores, love anything they can eat off the bone! These tasty little suckers would also make a great BBQ dish or part of a meal with some delicious veggies, sweet potato chips or some Quinoa Tabuleh. The best bit – they could not be easier to make!

Ingredients
- 8 chicken drumsticks
- 1 tbsp coconut oil melted
- 1 tbsp honey or substitute e.g. rice syrup or agave nectar
- 2 tsp curry powder

Instructions
- Preheat the oven to 200oC.
- Mix the oil, honey and curry powder in a large bowl.
- Add the drumsticks and mix to fully coat and place in a roasting tin or tray.
- Bake for about 40 minutes, turning half way through if you like.
