I love a chicken casserole. This is my go-to recipe when I’m feeling in need of some nutrients and I can’t be bothered to do anything exotic or fiddly – you can pretty much throw this together and sit back and wait for the magic to happen!!

Ingredients
- 2-4 chicken breasts or bone in skin on joints
- 1 tbsp butter or ghee
- 1 Onion chopped
- half a bulb of garlic halved across the middle or peeled and crushed if you prefer
- 2 sticks of celery chopped
- 2-4 carrots peeled and chopped
- 1 leek chopped
- 1 bay leaf
- a handful of parsley chopped
- ap 150ml white wine
- ap 700ml chicken or vegetable stock

Instructions
- Preheat the oven to 180oC.
- Brown the chicken in a frying pan and place in a casserole dish.
- Soften the vegetables over a light heat for about 10 minutes in butter or ghee and add them to the dish along with the wine, stock, bay leaf and herbs.
- Bake the whole thing in the oven for about 30-40 minutes, until the chicken is cooked through.

Chicken casserole – I will definitly be doing this one night its perfect all the with back to school madness! Would it work in the slow cooker?
I’ve never actually used a slow cooker but I’m pretty sure you could just throw everything in and it would be delicious – good idea!!
