Fanny’s Simple Chicken Casserole

I love a chicken casserole.  This is my go-to recipe when I’m feeling in need of some nutrients and I can’t be bothered to do anything exotic or fiddly – you can pretty much throw this together and sit back and wait for the magic to happen!!

Instructions
  1. Preheat the oven to 180oC.
  2. Brown the chicken in a frying pan and place in a casserole dish.
  3. Soften the vegetables over a light heat for about 10 minutes in butter or ghee and add them to the dish along with the wine, stock, bay leaf and herbs.
  4. Bake the whole thing in the oven for about 30-40 minutes, until the chicken is cooked through.

    Chicken casserole – I will definitly be doing this one night its perfect all the with back to school madness! Would it work in the slow cooker?

      I’ve never actually used a slow cooker but I’m pretty sure you could just throw everything in and it would be delicious – good idea!!
