Ingredients

quinoa
1/2
large red onion
chopped
1/4
cucumber
finely chopped
Approx 20 cherry tomatoes
quartered
Handful of fresh mint
chopped
1-2
tbsp
olive oil
juice of half a lemon
Instructions
Cook the quinoa as per the instructions
Add the onion, cucumber, tomatoes and mint
Mix together the olive oil and lemon and drizzle over the tabuleh
