Quinoa is a great alternative to cous-cous as it is naturally gluten free and higher in protein. I’ve actually managed to trick one particular health-food-hater who is well known to me (but who shall remain nameless!!) that this is regular Tabuleh – but sssshh don’t tell him or he’ll be suspicious of my other offerings!!

Ingredients
- 300 g quinoa
- 1/2 large red onion chopped
- 1/4 cucumber finely chopped
- Approx 20 cherry tomatoes quartered
- Handful of fresh mint chopped
- 1-2 tbsp olive oil
- juice of half a lemon

Instructions
- Cook the quinoa as per the instructions
- Add the onion, cucumber, tomatoes and mint
- Mix together the olive oil and lemon and drizzle over the tabuleh
