We don’t allow juice in our house these days (I know, very mean!!) but I did make this special little treat recently for a birthday brunch and it was delectable. If I’d have been really kind I would have let the kids have some 😉

- Half a watermelon peeled and roughly chopped
- Small handful of mint leaves
- Juice of 1-2 limes to taste
- 500 mls coconut water or plain filtered water
- Ice optional
