  1. I like to briefly cook the chickpeas in water to soften them a little (about 5 mins), but you don’t have to
  2. Simply place all your ingredients into the blender and whizz up
  3. If the mixture is too dry add more olive oil and/or some water
  4. Once you’ve got it to your desired consistency you can add whatever else you fancy to flavour – I like lemon and coriander, roasted peppers or sun dried tomatoes and pine nuts – just let your creative juices flow!!
  5. You can portion up and freeze what you don’t want to use immediately. If it’s dry when you thaw it out simply add a bit more water or oil.
