Ingredients

coconut oil

large sweet potato
peeled and cut into chunks

red pepper
chopped
1
red onion
sliced

gluten free sausages

Instructions
Preheat the oven to 180oC
Sauté the chopped sweet potato in the oil in a large frying pan for about 15 minutes and throw them into a casserole dish.
Fry the pepper and onion in the same pan and add these to the dish.
Fry the sausages until cooked through, then chop into bite size pieces and add to the dish.
Whisk the eggs together with the milk and poor this over the other ingredients.
Bake in the oven for about 30-40 minutes until the eggs are cooked and firm.
Serve with a nice green salad or some crispy cooked kale.
