As we all know, I love an eggy lunch/brunch and I just created this awesome dish to add to my collection. It is so delish!!

Ingredients
- 1 tbsp coconut oil
- 1 large sweet potato peeled and cut into chunks
- 1 red pepper chopped
- 1 red onion sliced
- 8 gluten free sausages optional
- 8 eggs
- 1 cup Almond milk

Instructions
- Preheat the oven to 180oC
- Sauté the chopped sweet potato in the oil in a large frying pan for about 15 minutes and throw them into a casserole dish.
- Fry the pepper and onion in the same pan and add these to the dish.
- Fry the sausages until cooked through, then chop into bite size pieces and add to the dish.
- Whisk the eggs together with the milk and poor this over the other ingredients.
- Bake in the oven for about 30-40 minutes until the eggs are cooked and firm.
- Serve with a nice green salad or some crispy cooked kale.
