chicken breasts

harissa paste

coconut oil

Scrubbed and diced

stock or water

dried apricots

Instructions
Smother the chicken breasts in the harissa paste.
Heat the oil in a large casserole dish and brown the chicken breasts.
Remove the chicken and set aside whilst you soften the carrots and onion for a few minutes.
Add the stock, apricots and tomatoes, give it all a stir then snuggle the chicken breasts deep under the vegetables.
Pop on a lid and cook gently for about 45 minutes.
I like to shred the chicken and coat it in the juices before scattering the coriander and almonds on top and serving up.
