I am absolutely in love with the sweet and savoury flavours of a tagine. This tasty chicken version is so quick and easy to make you can enjoy it any day of the week. Dish up this nutritious meal with some healthy steamed greens or some crispy kale for an all round winning meal.

Ingredients
- 4 chicken breasts
- 1 Tbsp harissa paste
- 2 Tbsp coconut oil
- 1-2 carrots Scrubbed and diced
- 1 Onion Sliced
- 1 Cup stock or water
- 2 Handfuls dried apricots Halved
- 3 Handfuls Cherry tomatoes Halved
- 1 Handfuls fresh coriander Chopped
- 1 Handfuls flaked almonds

Instructions
- Smother the chicken breasts in the harissa paste.
- Heat the oil in a large casserole dish and brown the chicken breasts.
- Remove the chicken and set aside whilst you soften the carrots and onion for a few minutes.
- Add the stock, apricots and tomatoes, give it all a stir then snuggle the chicken breasts deep under the vegetables.
- Pop on a lid and cook gently for about 45 minutes.
- I like to shred the chicken and coat it in the juices before scattering the coriander and almonds on top and serving up.
