Instructions
Heat the ghee or oil in a large pan, add the spices and onion and cook gently for around 5 minutes.
Add the garlic, ginger and chilli a cook for a few more minutes.
Add the fresh tomatoes and soften for a few minutes before adding the tinned tomatoes.
After about 5 minutes add the chickpeas, then the spinach and warm through and finally scatter with the coriander.
Serve with extra green veggies on the side.
