It does give me a tickle when people say they don’t have the time or inclination to create good food, because honestly, good food can be as ridiculously simple and tasty as this.
This throw-together meal with a kick can feed the whole family in no time at all and any well stocked kitchen will already have most of the ingredients knocking around so don’t hang about – give it a whirl!! (Little tip for smaller taste buds – chop the chilli into larger pieces so they can pick them out!)

- 1 Tbsp ghee or coconut oil
- 2 Tsp ground cumin
- 1 Tsp ground turmeric
- 2 Tsp garam masala
- 1 Onion Chopped
- 1-2 Cloves garlic Peeled and chopped
- 1 cm fresh ginger Peeled and chopped
- 200 G Tomatoes Cherry or large, chopped
- 400 G Tinned tomatoes
- 400 G tinned chickpeas Drained and rinsed
- 3ish Large handfuls fresh spinach (Or other greens)
- Handful fresh coriander Chopped

Instructions
- Heat the ghee or oil in a large pan, add the spices and onion and cook gently for around 5 minutes.
- Add the garlic, ginger and chilli a cook for a few more minutes.
- Add the fresh tomatoes and soften for a few minutes before adding the tinned tomatoes.
- After about 5 minutes add the chickpeas, then the spinach and warm through and finally scatter with the coriander.
- Serve with extra green veggies on the side.
