High protein breakfasts can be a challenge don’t you think? I’m constantly trying to think of new and tasty things to have and so I recently created these lovely Mediterranean style chicken balls. Now, if you haven’t tried the savoury breakfast you’ll have to bear with me, but if I tell you that a high protein (rather than a high carbohydrate) breakfast will stimulate your metabolism, stabilise your blood sugar and ultimately lead to a reduction in body fat and an increase in muscle mass, does that make you want to give it a go?

Instructions
Preheat the oven to around 175oC.
Mix all of the ingredients together in a bowl.
Shape the mixture into small balls, place them in a baking dish and bake in the oven for around 25 minutes, until cooked.
Enjoy straight from the oven or cool and refrigerate or freeze for a speedy breakfast another day.
