large carrots
cut into chunks
2-3
sticks celery
cut into chunks (optional for low FM)

onions or shallots
quartered or sliced (optional for low FM)

beef brisket joint

preferably homemade

Instructions
Preheat the oven to 130oC.
Drop the carrots, onions, celery and bay leaves into the bottom of a casserole dish with a lid.
Pop the joint on top of the vegetables and pour the stock and wine into the dish.
Cover and bake for around 8-10 hours. (Alternatively cook at a higher temperature for less time.)
