This time of the year is pretty crazy hey? So if you need a throw it in the pan, easy, but fabulous dinner, then try this super simple slow cooked beef brisket. The slow cook time means that the meat just falls apart and is so succulent and tasty. Just add a few extra veggies to serve and it’s the perfect Sunday roast or dinner to entertain.
For a low FODMAP version simply omit the onions and celery (you can include the top part of celery for flavour).

Ingredients
- 2-3 large carrots cut into chunks
- 2-3 sticks celery cut into chunks (optional for low FM)
- 1-2 onions or shallots quartered or sliced (optional for low FM)
- 3 bay leaves
- 750 g beef brisket joint
- 400 mls stock preferably homemade
- 1/2 glass red wine

Instructions
- Preheat the oven to 130oC.
- Drop the carrots, onions, celery and bay leaves into the bottom of a casserole dish with a lid.
- Pop the joint on top of the vegetables and pour the stock and wine into the dish.
- Cover and bake for around 8-10 hours. (Alternatively cook at a higher temperature for less time.)

Hi Shoshana, thanks for your comments. The recipe is low FODMAP if you omit the onions and celery. I did state this in the comments box, which you perhaps didn’t see but I have now amended to add ‘optional’ in the ingredients list.
