Instructions
Preheat the oven to 220oC.
Wash and pat dry the duck and remove the giblets.
Place in a rack inside a roasting tray and smoother in ghee.
Roast in the oven for 40 minutes then reduce the temperature to 180oC and roast for a further 20 minutes until cooked.
