  1. Preheat the oven to 220oC.
  2. Wash and pat dry the duck and remove the giblets.
  3. Place in a rack inside a roasting tray and smoother in ghee.
  4. Roast in the oven for 40 minutes then reduce the temperature to 180oC and roast for a further 20 minutes until cooked.
