Duck is underused don’t you think? I’m not sure why, it’s tasty, it’s easy to cook and it actually no more expensive than chicken (although they don’t tend to be as meaty). We like ours with lettuce wraps or kolhrabi dauphinoise.

Instructions
- Preheat the oven to 220oC.
- Wash and pat dry the duck and remove the giblets.
- Place in a rack inside a roasting tray and smoother in ghee.
- Roast in the oven for 40 minutes then reduce the temperature to 180oC and roast for a further 20 minutes until cooked.
