OK so it’s not revolutionary, but it’s a regular feature in our house and if you haven’t tried it yet you really must…. It takes minutes to make but it transforms the relatively bland kale into a tasty, crispy delight that even the kids love! Add it to any meal to bump up your vegetable intake.

Ingredients
- 250 g kale leaves roughly chopped
- 1 tbsp oil (e.g. rapeseed sunflower, hemp)
- 1/2 tsp Himalyan Pink Salt or fresh sea salt

Instructions
- Preheat the oven to 200oC.
- Lay the kale onto a baking tray.
- Drizzle the oil over the top and scrunch it into the leaves with your hands.
- Sprinkle the salt over the top and bake in the oven for around 5-10 minutes, taking care not to let it burn.
