These are a delicious alternative to the cauliflower based pizza and are really easy peasy to make. They also pass the taste test of the number 1 pizza fan – my 6 year old son!

Ingredients
- 4 cups grated courgette
- 1 egg
- 1/2 cup grated mozzarella
- 1/2 cup grated Parmigiano
- 1 tsp oregano

Instructions
- Preheat the oven to 220oC.
- Microwave the courgette for a minute or 2, then cool and squeeze out the excess water.
- Mix all the ingredients together and lay on a tray in a vague pizza shape!
- Bake for 15-20 mins.
- Add you choice of toppings and bake for a further 10-15 minutes.
