Well it’s supposed to be Spring, but here in Manchester it’s pretty fffffreezing still so we’ve been really into our warming soups at the moment. This is one of my favourites – so super easy peasy and it definitely warms the cockles! Plus the kids love it too and it’s helping to keep the remainder of the winter bugs at bay (just!).
One thing to be mindful of is your protein content with every meal and this soup of course contains none. I like to eat my soup with a little side plate of a mix of things from the fridge such as leftover chicken, goats cheese and maybe a handful of nuts.

Cosy Tomato Soup
There's no great science to this and you don't have to be too accurate with the ingredients - play around with it to your liking.

Instructions
Sauté the onion in the oil for a few minutes until soft and then add the garlic for another couple of minutes
Add the tomatoes and pour in the stock and tomato paste
Bring to the boil and simmer for approx. 20-30 mins
Add the basil and blitz in a blender or with a hand blender in the pan
