Ingredients

desiccated coconut plus extra for rolling.

Instructions
Put the dates and apricots in a bowl and poor a little hot water over them to soak for 5-10 minutes.
Blitz the nuts and seeds in a blender and set aside.
Blitz the soaked dates and apricots until smooth.
Return the blended nuts, seeds and the remaining ingredients to the blender and blitz all together.
Roll the mixture into small balls (adding coconut oil or a little water to your hands to stop the mixture sticking) and roll in the extra coconut.
Refrigerate for about 30 minutes before eating or storing.
