Ingredients
- 50 g dried apricots
- 50 g dried dates
- sunflower seeds
- 50 g pumpkin seeds
- 100 g cashews
- 3 tbsp desiccated coconut plus extra for rolling.
- 2 tbsp chia seeds
- 50 g almond butter
- 1 tbsp vanilla
- 2 tbsp coconut oil melted

Instructions
- Put the dates and apricots in a bowl and poor a little hot water over them to soak for 5-10 minutes.
- Blitz the nuts and seeds in a blender and set aside.
- Blitz the soaked dates and apricots until smooth.
- Return the blended nuts, seeds and the remaining ingredients to the blender and blitz all together.
- Roll the mixture into small balls (adding coconut oil or a little water to your hands to stop the mixture sticking) and roll in the extra coconut.
- Refrigerate for about 30 minutes before eating or storing.
