So, I wanted to make my first recipe blog a delicious meal to show people that healthy eating doesn’t have to be boring or tasteless. However, I posted this picture on my Instagram this week and people keep asking me for the recipe. You guys are so easily tempted by sweet treats :-)) I made it quite a while ago and I seem to remember it did go down well. A word of warning however to anyone starting out on a road to health heaven – treats should be just that, consume them occasionally, not daily, but enjoy them when you do!

Ingredients
- 1 400ml can coconut milk
- 2/3 cup coconut oil
- 1/2 cup rice malt syrup
- 4 cups desiccated coconut
- pinch beetroot powder or natural red food colouring of your choice

Instructions
- Line a 20cm square tin with baking parchment paper extending 2cm over the sides
- Place coconut milk, oil and rice malt syrup in a small over a low heat and stir until melted and combined. Remove from heat and stir in desiccated coconut. Press half the mixture into the base of the tin and place in freezer.
- Take the remaining half and add the beetroot powder or natural colouring and combine until colour is evenly distributed. Press this on top of the base and refrigerate for at least 2 hours.
- Once firm, remove from the tin, trim edges and cut into squares.
