Coleslaw is such a great side to so many meals – salads, BBQs, meat dishes….. But don’t buy nasty shop varieties full of mayonnaise, preservatives and sugars. This is so quick and easy to make and will keep in the fridge for a good few days so you can keep dipping in.

Ingredients
- 1/2-1 red or green cabbage shredded
- 2-4 carrots grated
- 1 red onion sliced (optional)
- Handful cashew nuts preferably activated
- 2-3 tbsp Goats Yoghurt
- Squeeze of lemon juice
