Mexican Mince and Salsa in Lettuce Wraps

Ingredients
For the Mince:

tsp
ground cumin
1
tsp
paprika
1
tsp
chilli powder
1
tbsp coconut oil
1
Onion
chopped
2
sticks celery
finely chopped
500
g
beef or lamb mince
1
x 400g tin tomatoes
1
lime
For the Salsa:
2
spring onions
chopped
3
Tomatoes
chopped
1
cucumber
chopped
1
red chilli
deseeded and diced
juice of 1 lime
2
tbsp chopped fresh coriander
2
avocadoes
cut into chunks
1
lemon
cut into wedges
1
large cos lettuce
100
g
natural yoghurt
I use goats yoghurt
salt and pepper
Instructions
In a large frying pan, dry roast the cumin, paprika and chilli for 1 minute then add the coconut oil, celery, onion and pinch of salt for 5 mins
Add the mince for 1 min, then add the tomatoes and let it all simmer for an hour
To make the salsa, mix all the ingredients in a bowl
Squeeze the lemon juice and a sprinkle of salt over the avocadoes
When the mince is done squeeze the lime into it and serve with the lettuce leaf wraps, salsa, avocado and yoghurt
