I think I’ve said it once or twice before…. we love meals we can wrap up in lettuce. It makes me so proud to see the kids so open to such a healthy dish. Oh and the meat is soooo tasty.

Ingredients
- For the Mince:
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chilli powder
- 1 tbsp coconut oil
- 1 Onion chopped
- 2 sticks celery finely chopped
- 500 g beef or lamb mince
- 1 x 400g tin tomatoes
- 1 lime
- For the Salsa:
- 2 spring onions chopped
- 3 Tomatoes chopped
- 1 cucumber chopped
- 1 red chilli deseeded and diced
- juice of 1 lime
- 2 tbsp chopped fresh coriander
- 2 avocadoes cut into chunks
- 1 lemon cut into wedges
- 1 large cos lettuce
- 100 g natural yoghurt I use goats yoghurt
- salt and pepper

Instructions
- In a large frying pan, dry roast the cumin, paprika and chilli for 1 minute then add the coconut oil, celery, onion and pinch of salt for 5 mins
- Add the mince for 1 min, then add the tomatoes and let it all simmer for an hour
- To make the salsa, mix all the ingredients in a bowl
- Squeeze the lemon juice and a sprinkle of salt over the avocadoes
- When the mince is done squeeze the lime into it and serve with the lettuce leaf wraps, salsa, avocado and yoghurt
