We all need a huge repertoire of recipes that can be thrown together and the drop of a hat, don’t we? Well this is definitely one of those – not that it looks like it or tastes like it.

Ingredients
- 2 chicken breasts Chopped
- 1 red pepper Chopped
- 1/2 red onion Chopped (omit for LFM)
- 2 Handfuls Mangetout
- 2 Handfuls Edamame beans
- 1 Small courgette Spiralised
- 4 Handfuls spinach
- 2 Tbsp Coconut aminos
- 2 Tsp raw honey
- 1 lime Juice only
- 2 Handfuls walnuts Toasted
- 2 Handfuls fresh basil Torn

Instructions
- Fry the chicken, pepper and onion in some oil until the chicken is almost cooked through.
- Add in the rest of the vegetables and cook for another 5 minutes or so, maintaining lots of crunch.
- Finally add the aminos, honey and lime and stir through and then scatter the basil and walnuts on top.
- Serve and eat immediately!!
