This clever little flavoursome dish is nice and low FODMAP, so it won’t leave you feeling bloated or uncomfortable. And we all love a curry don’t we, so why not give this simple and tasty Saagwala a whirl? This will go perfectly with some Pilau cauliflower rice (previous post), or even just some delicious steamed greens.

Ingredients
- 3 tbsp garlic infused olive oil
- 800 g boneless chicken thighs
- 1 cup leeks green tips only for low FODMAP
- 4 cups spinach
- 1 mild green chilli deseeded and chopped
- 3 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/4 tsp ground cloves
- 2 tsp chopped ginger
- 1 tin Tomatoes (or 400g chopped fresh)

Instructions
- Cut the chicken thighs into chunks and brown them in the oil in a large frying pan. Remove and set aside.
- In the same pan, fry the leeks, cumin, cloves, turmeric and ginger, then throw in the spinach and leave to wilt for a few minutes.
- Add the tomatoes, chilli and chicken to the pan and leave to simmer for about 20-25 minutes, until the chicken is cooked through.
