Ingredients
- 3/4 Cup Honey or maple syrup
- 3 Tbsp Peanut or other nut butter
- 1/2 Tsp cinnamon
- 2 Cups Mixed nuts (Whatever you fancy)
- 1/2 Cup desiccated coconut
- 1-2 Tbsp Dried fruit e.g. goji berries or chopped figs (Optional)

Instructions
- Preheat then oven to about 170oC.
- Gently warm the honey/maple and nut butter in a pan and stir until smooth, then add the cinnamon.
- Roughly blend the nuts until they are kind of breadcumb texture (although some chunks are fine).
- Add the nuts and coconut to the honey mixture and combine thoroughly.
- Finally add the dried fruit (if using) and give another mix.
- Press the mixture into a small, parchment lined baking dish and bake in the preheated oven for about 15 minutes, until the top is golden.
- Remove from the oven and allow to cool completely in the tin before removing and cutting into squares.
