The poor old white potato gets a bit of a bad press these days doesn’t it? In actual fact, I’m not dead against the odd potato. They can have a place in the healthy, balanced diet of an active individual – providing an array of nutrients and healthy carbohydrates – when eaten at the right time. However, at times where you’re not so in need of carbohydrates, if you have more of a sedentary lifestyle for example, cauliflower can provide a great alternative to the potato. Cauliflower mash is a fantastic side to a meal or a topping for a shepherd’s or fish pie. Cauliflower is jam packed with nutrients that can help with weight loss, intestinal health, immunity, cancer protection and reducing risk of cardiovascular disease.

Instructions
Steam the cauliflower until soft.
Transfer it to a bowl and mash with a potato masher, adding the butter and milk to your desired consistency.
If you decide to add the cheese, you can either add it into the mash or sprinkle it onto the top of your dish before baking.
