I made this as part of the Portobello Mushroom Burgers (click link for recipe) but it was so delicious that we ate the rest over the following days on anything we could – crackers and toast for the kids and me with my salads.

Ingredients
- 250 g raw cashews
- 150 ml water
- 15 g nutritional yeast
- juice 1/2 lemon
- 1 clove garlic

Instructions
- Soak the cashews in the water for 30 mins if using high speed blender or for at least 2 hours if using a standard blender
- Put all the ingredients, including the soaking water into the blender and whizz until smooth
- Put into a jar and into the fridge to cool and set
