People have often said to me that they don’t know how to cook quinoa. Sometimes they’re not sure what to eat with it, or what to add into it, others feel they’re simply not sure how to cook it. Well I’m here to tell you, you don’t be afraid of the quinoa!!!!!
It really couldn’t be easier to cook; all you need to do is ad some water and bring it to a rolling simmer, giving the occasion stir with a fork until it’s done! It usually takes around 15-20 minutes depending on the amount you have in the pan. If you like, you can measure out roughly 3 times the volume water to quinoa so that it soaks up all the water, but usually I just wack some in and if there’s some left at the end, drain it in a sieve. This recipe is simple but super tasty and can be eaten as a side or a light meal or lunch so give quinoa a whirl today!!

Beetroot and Hallumi Quinoa

Instructions
Preheat the oven to about 190oC.
Peel and chop the beetroot, place it in a small baking dish with a drizzle of oil and bake in the oven for about 30 minutes until soft.
Place the quinoa in a pan with about 3 times the volume of water. Bring to the boil and simmer until cooked (roughly around 20 minutes).
Meanwhile, slice or cube the hallumi and dry fry it in a small frying pan until slightly browned on both sides.
Most, if not all of the water in the pan will have been absorbed but if the quinoa is cooked and there is still some water, drain in a sieve.
Place the cooked quinoa into a serving bowl and mix in the cooked beetroot, hallumi and the rest of the ingredients, including a drizzle of sherry vinegar and give them all a mix.
