I confess, sticky BBQ ribs don’t exactly fall into the ‘clean eating’ category but if you know me by now you know that I believe in balance and if the kids like them, I would much rather give them my homemade sauce, free from preservatives, chemicals and high amounts of refined sugar. If you’re partial to a sticky rib then you could do far worse than opting for this delicious and easy recipe!

Ingredients
- 1 kg pork ribs
- 500 mls water
- 4 tbsp tomato paste
- 3 tbsp coconut sugar
- 1 clove garlic crushed
- 1 tbsp white wine vinegar
- 2 tbsp balsamic vinegar
- 1 tsp dried mustard powder
- 1/4 tsp dried chilli flakes
- Sea salt and freshly ground black pepper

Instructions
- Boil the ribs in the water for around 40 minutes then remove the ribs reserving the juice.
- Preheat the oven to 180oC.
- To the remaining juice, add the tomato paste, coconut sugar, garlic, both vinegars, mustard powder, chilli flakes and some salt and pepper and simmer this for about 20 minutes until it is slightly reduced.
- Place the ribs in a baking dish or tray and pour about half of the sauce over the top and bake for about 20 minutes.
- Turn the ribs, pour over the remaining sauce and bake for a further 20 minutes or so.
