The sun has been shining here in South Manchester today so the BBQ got its first outing of the year and what better way to finish a BBQ than with some delectable ‘ice cream’. Never miss out on a favourite treat!! And don’t be put off thinking this will take hours to make as it really doesn’t (apart from allowing the bananas time to freeze).

Ingredients
- 4 bananas peeled and sliced thinly
- 1/2 cup chopped roasted almonds
- 2 tsp plus 2 tbsp maple syrup
- pinch of course sea salt
- 1/2 cup unsweetened almond milk
- 1 tsp pure vanilla extract

Instructions
- Place the banana slices on a lined baking tray and place in the freezer
- Combine the almonds with 2 tsp of maple syrup and sea salt and set aside
- Once frozen, blend the banana slices with the almond milk, remaining maple syrup and vanilla in a food processor
- Spoon into a bowl and keep in the freezer until ready to use or serve straight away with a sprinkling of almonds
