Banana Fritters with Cinnamon Dust

Ingredients
Coconut oil for frying
4
bananas
thickly sliced into diagonal wedges
100
g
of gluten free plain flour
2
tbsp cornflour
80
ml
ice cold sparkling water
4
tbsp xylitol
1
tbsp ground cinnamon
sugar free ice cream to serve

Instructions
Fill a deep saucepan with about 5cm of oil and place on a medium heat
Place the flour and cornflour in a large bowl and gradually whisk in the sparkling water a little at a time
Add the bananas and stir to coat
Test the oil is hot enough – drop in one of the slices and if it bubbles it’s ready
Deep fry the banana slices in batches until golden (about 3 mins)
Carefully remove each slice with a slotted spoon and place on some kitchen paper
In a small bowl mix together the xylitol and cinnamon
Place the fritters on a serving platter or on individual plates and sprinkle over the cinnamon dust
Serve hot with a scoop of ice cream
