These are pretty special but also pretty naughty so are best reserved for a special occasion, rather than troffing on a daily basis!! They would make a great dinner party dessert and they really only take a few minutes to make.

Ingredients
- Coconut oil for frying
- 4 bananas thickly sliced into diagonal wedges
- 100 g of gluten free plain flour
- 2 tbsp cornflour
- 80 ml ice cold sparkling water
- 4 tbsp xylitol
- 1 tbsp ground cinnamon
- sugar free ice cream to serve Coconut Collaborative do a great one or make your own

Instructions
- Fill a deep saucepan with about 5cm of oil and place on a medium heat
- Place the flour and cornflour in a large bowl and gradually whisk in the sparkling water a little at a time
- Add the bananas and stir to coat
- Test the oil is hot enough - drop in one of the slices and if it bubbles it's ready
- Deep fry the banana slices in batches until golden (about 3 mins)
- Carefully remove each slice with a slotted spoon and place on some kitchen paper
- In a small bowl mix together the xylitol and cinnamon
- Place the fritters on a serving platter or on individual plates and sprinkle over the cinnamon dust
- Serve hot with a scoop of ice cream
