I’ve tried a few sugar free flapjack recipes but the banana in this one makes it lovely and sweet and moist which is very much to the kiddies liking! I mix up a little cacao powder, rice syrup and hot water and drizzle it over the top for added wow factor.

- 360 g oats I use gluten free
- 2 bananas ap 200g
- 6 tbsp maple syrup
- 6 tbsp cashew butter or any nut butter
- 4 tbsp coconut oil plus extra for greasing

Instructions
- Preheat the oven to 200oC
- Mash the bananas with a fork and add to a saucepan with the maple syrup, cashew butter and coconut oil and allow to simmer until it forms a liquid
- Pour the liquid over the oats and stir well
- Grease a baking tray with coconut oil and transfer the flapjack mix, pressing it down firmly
- Bake for 15-20 minutes until the top starts to brown
- Leave to fully cool before slicing up
