When they’re done, keep them in a tin over the next few days and bring them out in emergency boredom/hunger situations. Plus for those running out of the door in the morning they also make a reasonably healthy breakfast-on-the-go.

Ingredients
- 2 Lg bananas (Or 3 small ones)
- 2 eggs
- 1 Cup yoghurt (Lactose free for low FODMAP, goats or nut based for dairy free diets)
- 2 Cups gluten free oats
- 1.5 Tsp baking powder
- 1/2 Tsp bicarb of soda
- 1/2 Tsp vanilla
- 2 Tbsp honey (Optional)
- 2 Handfuls Mixed fresh or frozen berries

Instructions
- Preheat the oven to 175oC and line a muffin tin with cases.
- Mash the bananas in a large mixing bowl then add in the eggs and mix thoroughly.
- Add in the rest of the ingredients (apart from the berries) and mix again.
- Lastly add in the berries (chopped into smaller pieces if large) then spoon the mixture into the cake cases.
- Bake in the oven for 15-20 mins or until and inserted skewer comes out clean and the tops are slightly golden.
